Your email client sends outgoing mail via SMTP to port 25 of MTA (mail transfer agent) on remove server. This MTA mail transfer can go on between server to server until mail gets to destination machine. On destination server/machine, POP3/IMAP service is running on ports 110/143 that your friend's mail client can connect to to retreive email.
